Breakfast Egg Bites

1 container of Cottage Cheese

1 small container of Egg Whites

1/4 cup fresh Kale (chopped fine)

1/4 cup Maple Breakfast Sausage (cooked and rough chopped)

Feta Cheese to sprinkle on top

Non-Stick Spray

Silicone Mold (recommend purchasing CAKETIME 12 Cups Silicone Muffin Pan – Nonstick BPA Free Cupcake Pan 1 Pack Regular Size Silicone Mold on Amazon)

-combine the egg whites and cottage cheese in blender and blend until smooth. Let sit for a bit to get all air bubbles out. Preheat oven to 350 and spray your molds well. Place the mold on a sheet pan, so it does not spill when transferring to the oven. Start the fill the molds about 1/2 full, distribute the kale and sausage in each mold evenly, finish with remainder of the eggs to fill to the top. Sprinkle your feta cheese on the egg whites. Cook for about 20 minutes. You want to make sure they are solid and do not jiggle. Side Note-you can switch out the filling to anything that fancy your tastebuds. This is recipe was asked to be on rotation.
